Almost since the beginning of when restaurant dining rooms were allowed to reopen, they’ve had to close, in many cases, after close contact with the virus that nearly killed the industry. Some shut down for a night, others until further notice, but all are dealing with the reality of doing business during a pandemic.

We talked to the owner of Herbie’s Restaurant in Clayton, who had to close his restaurant for 10 days this summer, to find out what happens when the lights go off, what us diners should feel around for and how they know what to do next when they’re largely in the dark.
